Coconut Butternut Squash Soup | serves 6
A warm and velvety blend of roasted butternut squash, creamy coconut milk, and aromatic spices. Perfect for cozy nights!
INGREDIENTS
1 medium butternut squash, (about 4 cups cubed)
1 15 ounce can coconut milk, full fat
1 1/2 cups water
2 slices fresh ginger, 1/8" thick with skin on
salt, to taste
METHOD
1. Peel squash, cut lengthwise and remove seeds; cut into large cubes.
2. Combine squash, coconut milk, water and ginger in a medium pot. Cover and cook on medium to low until squash is soft (about 20 minutes)
3. Cool for 5-10 minutes. Remove ginger and discard. Add squash to the Vitamix (or blender) with 1/2 the cooking liquid and puree. Add more cooking liquid as needed to achieve thick, creamy consistency.
4. Season with salt.
Cauliflower Cheese Soup | serves 6
A dreamy, cheesy soup with the perfect balance of indulgence and nutrition. This Vitamix recipe blends cauliflower into a velvety base without needing heavy cream.
INGREDIENTS
1 large head cauliflower, cut into chunks
4 cups water
2 cups shredded cheddar cheese
1 small yellow onion, thinly sliced
1/2 teaspoon salt, or more to taste at end
fresh ground pepper, to taste
METHOD
1. In medium pot, combine cauliflower and onion with water and cook, covered, on medium 20-30 minutes (until the cauliflower is soft to the fork's touch).
2. Let soup cool slightly and add to the Vitamix (or blender) with cheese and salt. Purée until smooth and creamy. Add more salt and pepper to taste.
Roasted Lemon Asparagus Soup | serves 6
Packed with nutrient-dense asparagus, this vibrant soup is as delicious as it is nourishing and without the dairy.
INGREDIENTS
2 bunches asparagus, bottoms trimmed
2 lemon, juiced
6 cloves garlic, rough chop
1/4 cup extra virgin olive oil
5 cups water, or vegetable broth
1 teaspoon salt
fresh ground pepper, to taste
METHOD
1. Preheat the oven to 375˚.
2. Trim 1-2" off bottom of asparagus. Place in a baking dish topping with oil, garlic and lemon juice (simply squeeze lemon over stalks); toss until asparagus is coated. Roast until lightly browned and soft (about 20 minutes).
3. Combine asparagus (and seasonings from the baking dish) with salt and water in the Vitamix (or blender) and purée until creamy. Pepper to taste.
